Can you tell me how you make your scup from scratch? I have the equipment to do it, but never have.
For one batch (would serve 4 hungry people, we always have a LOT of leftovers) I do the following:
Put 2.25 cups semolina flour into your bread maker. Add 3 eggs, 1/4 cup water, and 1 tablespoon olive oil. Kneed on high for 22 minutes. You will have to scootch everything down with a spatula to make sure it all gets into a ball. Then wrap the ball in saran wrap, and keep in the fridge for a few hours.
You may need to adjust the oil and water to get the right consistency.
You only need to boil it for about 4 minutes after cutting it up and hanging it.
